Location: Quindío, Colombia Process: Extended Fermentation Washed Varietal: Typica Cup Notes: Raspberry Tea, Honeycrisp, Oak Chardonnay Edwin Noreña is an agro-industrial engineer, Q grader (certified coffee grader), Cup of Excellence judge, and undoubtedly one of Colombia's innovative leaders in coffee. Edwin's unique processing methods are globally celebrated, and his coffees are routinely used in competitions. Edwin brings us one of the original Arabica varieties, the iconic and highly sought after Typica. Edwin partnered with Jefferson Motta to feature Jefferson’s harvest from Finca San Adolfo. The harvested Typica cherries are first soaked in water to clean and then placed in low oxygen containment for 24 hours. Afterward, the cherries are pulped and macerated in 200kg reactors for 48 hours until they are carefully greenhouse dried to reach optimal conditions. Retail Bag MSRP: $31.00
