Ridgeline – crisps and tuiles, standing up Ridgeline is a solid block of Iroko wood cut with six angled grooves. Each groove holds a crisp, a tuile or a cracker upright, so the thin, fragile elements of a dish are presented standing rather than lying on the plate, and they stay crisp until the guest takes them. The wood is finished with food-grade mineral oil. Between courses it also works as a rest for knife and fork. Made in Spain for professional service.
