Here, we partner with Giuliano Martinelli, a master truffle hunter whose small-batch workshop grew from a lifelong passion for foraging these woods at dawn with his dogs. Made for Zia Pia with high-quality extra virgin olive oil, white Bianchetto truffle, and real slices of truffle suspended in the bottle, this is a finishing oil that lifts everything it touches. A few drops elevate pasta and risotto, grilled or roasted meats and vegetables, and simple eggs and omelettes. That devotion to the truffle, from forest to bottle, is what drew us to their work.
