Costa Rica White Honey - Single Farmer Project

Our Fall 2026 single origin hails from a Costa Rican micomill that is run by two siblings, Alexander and Magali Delgado and their spouses, who own and operate both farms and a small mill in Grecia, in the West Valley. After harvesting, the cherry is brought straight to the family home, where they do a variety of processing methods from washed to natural. Our selection is a white honey process, which is when coffee cherries are depulped and keep some of the mucilage (the protective coating around the seed). The coffee is then laid out on raised beds for a few days then transferred to a covered patio where it is turned regularly until the drying process is complete. We've roasted this as a light roast and have cupped notes of tart grape, brown sugar, and a sparkling finish (a clean, bright, refreshing aftertaste). It is recommended for enjoyment on a pour over using a 13:1 ratio or in a drip pot using a 15:1 ratio, best enjoyed black.
