Limited Release - The Wight - Single Malt Whisky

This whisky started life in a 30-gallon ex-Bourbon cask from Journeyman Distillery in Michigan. Journeyman is renowned in the US as one of the relatively few organic whiskey distilleries, with an almost obsessive approach to sourcing the grain that goes into their spirit. The barrels were shipped directly from the distillery whilst still wonderfully fresh. When they arrived, they filled the distillery with the most incredible aromas of Bourbon, vanilla, caramel and sweet oak. After two years, The Wight had taken on just the right amount of sweetness from the American oak, and it was time to give it a new home. For its next chapter we headed to Europe: a gorgeous French oak barrique that had previously held rich Port, shipped all the way to Australia and re-coopered into a 100-litre cask for us by Murray River Coopers. The result is exactly why we love doing this. The sweetness and warmth of the bourbon cask is still there but now wrapped in the richness and depth of the Port cask — two very different influences coming together to make something far more indulgent than either alone.
