WE ARE TASTING RASPBERRY | LIME | DRIED CHERRY Vibrant, fruit-forward, and deeply connected to its origin, Ethiopia Zema Natural brings together bright raspberry and lime with the concentrated sweetness of dried cherry. This single-producer coffee comes from Dinkalem Ademe’s farm near the village of Checho in Ethiopia’s historic Keffa region, widely recognized as the birthplace of Arabica coffee. Grown beneath the forest canopy at elevations of 1,800 to 2,000 meters, the coffee matures slowly, developing remarkable sweetness and complexity. Dinkalem’s farm encompasses approximately 400 hectares, yet only about 40 hectares are planted with coffee. Most of the property remains preserved as native forest, protecting biodiversity and the natural ecosystem surrounding the farm. After harvest, the cherries are naturally processed with minimal water, intensifying the coffee’s fruit character and sweetness. S.E.T. Sourcing Framework Social Swift Coffee Sourcing has worked with Dinkalem since 2017, providing consistent market access and supporting a long-term relationship built around quality, stability, and shared value. Dinkalem’s vision extends beyond his own farm. His growing outgrower program is designed to create additional opportunities for neighboring producers and families while preserving local farming knowledge. Environmental Approximately 90% of the farm remains native forest. Coffee grows within this biodiverse ecosystem beneath natural shade, while gradual replanting replaces aging coffee trees without clear-cutting established areas. Natural processing also requires significantly less water than traditional washed processing methods. Traceable This is a single-producer, single-farm, single-harvest coffee whose identity is preserved from production through export. Only 707 bags were produced from this harvest. We committed to purchasing 10% of the farm’s total production, deepening our relationship with Dinkalem while securing a meaningful share of this limited coffee. Every cup can be traced back to one producer, one farm, and one specific harvest.
