2023 Cabernet Sauvignon
Varietals, Vineyard & Harvest: 100% estate-grown cabernet sauvignon, clones 169 and 412, hand-harvested at Black Bank Hill on 3 November 2023 at 22.5 brix. Winemaking: Destemmed and lightly crushed for an ambient/wild fermentation. Racked into French oak barrels for 20-months élevage of 15% new oak. Estate-bottled unfiltered and unfined at Black Bank Hill on 25 July 2025. Wine Description: Medium ruby in colour with warm and inviting aromas of ripe dark cherry, red currant, blackberry, oregano, eucalyptus, tobacco, clove and baking spices. Medium-plus in body, the palate continues with cassis, pomegranate, plum, wild raspberry, black tea, leather, cedar, tobacco and a lovely seam of cocoa through the finish. Medium-plus acidity and chewy but ripe tannins. Shows class and restraint with the potential to age beneficially in bottle for the next 5-10 years and drink well for several years beyond that. Acidity & pH: TA 8.00 g/L, pH 3.41 Sweetness: Extra-dry on the palate containing 0.7 g/L residual sugar Alcohol by Volume: 13.5% Production: 149 cases
