Clairette vines planted back in 1958 (yes, really) are blended with younger Rolle to create something that feels both timeless and alive. Tasting Notes A luminous pear-yellow in the glass, with glimmering grey hints that hint at something a little out of the ordinary. The nose is ripe and expressive: candied lemon, sun-warmed grapefruit, and a dusting of gentle spice. On the palate, it's a wonderful contradiction — fresh and energetic, yet round and full-bodied, with a crisply defined finish that keeps calling you back. The Mediterranean in liquid form. Food Pairing Suggestions Structured enough to hold its own against the good stuff. Pair with roast chicken, a noble fish in a light cream sauce (sea bass and turbot are naturals here), or a wedge of aged Comté or Beaufort. It's equally at home with briny oysters and a generous Provençal spread—versatile, elegant, and unfussy. About the Winemaker Noémie Guez didn't inherit the vineyard — she chose it. Born and raised in the shadow of the Sainte-Victoire, she returned to take over Domaine Saint-Pancrace in 2016, building the winery from the ground up with her own vision and, frankly, remarkable determination. The first vintage followed in 2019. Today she tends 20 hectares of certified organic vines on soils that have been farmed since antiquity — limestone rubble, red clay, and blue sandstone — with an 11th-century chapel watching over the whole thing (built on the ruins of a Roman villa, because Provence doesn't do things by halves). Her approach is as grounded as the terroir: horses work between the rows, spontaneous grasses are encouraged, sheep arrive in autumn, and every decision is made parcel by parcel, vintage by vintage – no shortcuts, no shortcuts. The result is wine that's honest, precise, and unmistakably tied to this one extraordinary place.
