Ceremonial Matcha
Ceremonial-grade matcha starts with how the leaves are grown. Shaded from sunlight for several weeks before harvest, the plants slow down. Chlorophyll deepens, L-theanine builds, and the flavour that emerges is something softer and more complex than anything grown in full light. Vegetal, buttery, fresh. A brightness that you can see before you even taste it. Stone-ground slowly into a fine, vivid powder, it's made to be drunk rather than cooked with. Whisked into hot water, it produces something with real depth. Paired with milk, it becomes something else entirely. The caffeine is present, but so is the L-theanine, the amino acid that occurs naturally in shade-grown tea. The two work together in a way that feels measured and calm rather than sharp. This is the matcha we use across our four London cafes. Now available to brew at home.
