White Wine Constantini Vitis Eminent – Goriška Brda, Slovenia. Vinification: Hand harvesting of selected grapes at full ripeness in September. Cold maceration: 18 hours. Each variety is fermented separately at a controlled temperature in stainless steel tanks. Maturing: 30% three months in Slavonian oak barrels and four months in stainless steel tanks, each variety matures separately. 70% seven months in stainless steel tanks, each variety matures separately. Maturing continues after bottling. Characteristics: Crystal, golden yellow color. Fresh and persistent bouquet. On the palate, ripe citrus fruits with a touch of Mediterranean herbs and almonds. An elegant, sophisticated blend. Fresh, juicy taste with fresh hint of wood. A structured and complex wine. Mineral and fruity aftertaste. Food pairing: carpaccio with white truffles, seafood pasta, semi-matured cheeses, spinach ravioli in sage butter. Serving temperature: 12 °C.
