Some books are all about inspiration. Some are travelogues. Others memoirs. And then there are the books you can't decide whether to read cover to cover or head straight to the kitchen so you can start to cook. Dobre Dobre is all of these. Filled with captivating stories and history, but also with the kind of recipes your likely to turn to over and over. The kind of book whose pages are destined to become sticky with buttery fingers (at least if you're us). Laurel's first book--New European Baking--went a bit under the radar even though it was nominated for a James Beard Award. We were totally smitten with it's atlas of European recipes, wonderful baker profiles, and clear instructions. Her second book takes a different approach, focusing deeply on the impressive baking culture of Poland, with recipes honed by her skill as a professional baker. It's a massive undertaking, clocking in at over 350 pages, with gorgeous photographs and detailed instructions. Of course these recipes tell a tale of immigration as well. Laurel was born In Massachusetts but currently runs a bagel shop and wine bar in Berlin. The recipes in this book are shaped and reshaped by the fluid movement of people and cuisines, honed by countless generations. The recipes--like the cultures that developed them--often transcend borders. Chapters cover everything from breads, to filled buns and pastries. Both sweet and savory. This is a must have for serious bakers. And for anybody interested in the cuisine and culture of Eastern Europe.
