Boiled cassod flowers (ดอกขี้เหล็กต้ม), known as dok khilek, have a soft, tender texture and distinctive earthy bitterness. Boiling mellows their natural intensity, preparing them for use in rich, strongly seasoned Thai dishes. How to use: Drain and rinse the flowers before adding them to gaeng khilek, where their bitterness is balanced by coconut milk, curry paste and savoury ingredients.
