The nose displays excellent depth & abundance of aroma with mineral complexity & a subtle hint of toasted oak. The lime zest is also evident on the palate, along with honeysuckle & hazelnut. Silky length and texture with a very long flavour profile & complex structure from wild yeast, “Surlée” in the barrel & concrete egg with a buttery & lingering finish.
