Grilled Esperance Scallops, kombu and bonito beurre noisette, finger lime, chives. Fried Shark Bay prawn on milk bread, salted duck egg sauce. 2026 Wilyabrup Valley Rosé Second course Nigiri Selection Torched ora king salmon, soy butter glaze, chive. Southern Bluefin Tuna, roast capsicum dressing and pickled shallot. 2020 Wilyabrup Valley Chardonnay Third course Dumplings Esperance scallop and squid siu mai, tobiko, crispy shallot.
