The hand-picked fruit ferments spontaneously with native yeasts before undergoing long, slow aging on its fine lees in a combination of neutral oak vessels and stainless steel. The wine undergoes extended bottle maturation before release, allowing the variety’s natural tendency toward waxy oxidation and mineral density to fully develop. Bottled with minimal sulfur, this is a powerful, dry, and uncompromising Piedmontese white built for exceptional cellar potential. A deep amber-gold hue opens to dense aromas of dried apricot, beeswax, petrol, crushed walnut, and chamomile tea. The palate is broad and palate-coating, delivering rich flavors of preserved lemon, dried pear, honeyed almond, and wet slate framed by a firm phenolic grip. High, driving natural acidity cuts directly through the wine's oily, leesy weight, keeping the mid-palate balanced and electric.
