Tasting notes A bright golden wine with a calm and layered aromatic profile. Notes of honey, tarte tatin, custard, and ripe apricot are complemented by a subtle mineral character reminiscent of seaweed. The palate shows richness from fully ripened fruit, balanced by clean acidity and a gentle bitterness reminiscent of citrus peel, leading to a long and lingering finish. Can be enjoyed over 4–5 days after opening. Food pairing Jellied chicken skin broth, soufflé omelet, foie gras flan, stir-fried bean sprouts with fish sauce, sautéed ris de veau, baked cod and scallop in pastry, lamb and coriander dumplings, chicken sauté with pernod sauce, margherita pizza Winemaking “Cantata di montagna 2022” is made from fully ripened Petit Manseng grown by contracted farmers in Kaminoyama, Yamagata, and Takayama Village, Nagano. The grapes were hand-harvested and gently whole-bunch pressed, then settled overnight at low temperature before clarification and fermentation. Fermentation began in stainless steel tanks at temperatures below 22°C for approximately ten days, after which the wine was transferred to oak barrels where fermentation continued with indigenous yeasts for around two months. Malolactic fermentation by wild lactic acid bacteria then followed. The wine was aged for approximately six months, with 45% in oak barrels and 55% in stainless steel tanks, before blending and bottling unfined and unfiltered on 14 June 2023. This is a wine that expresses the individuality of its land and origins, reflecting how recent Japanese wines are evolving beyond simply being “made in Japan” toward expressing a clearer sense of place and regional character. The name “Cantata di montagna” refers to a vocal composition, evoking the harmony of voices resonating through the mountains. It is a wine born from the collaboration between land, climate, and dedicated growers.
