The name of Papari Valley comes from characteristics of the territory of vineyards. Papari in Georgian means mane of the horse. The vineyards are situated on a mountain’s sloppy ground, which has wavy relief. Production is made by standards of bio wine. In the year 2019, they received the bio certificate Wine is produced in village Akhasheni by Kakhetian method. Fermentation is finished by naturally occurring yeasts. No artificial intervention in the process is made. Papari Valley 3 Terraces Saperavi presents itself with a rich, deep purple hue that immediately reveals the power and intensity of the wine. The aroma is complex and refined, with enticing scents of ripe blackberries, a hint of licorice, and subtle earthy notes. Papari Valley is a small-scale winery in Georgia, run by the Kurdadze family. Here, natural wines are made according to ancient Georgian traditions, with the wines aging in qvevris – large clay amphorae buried in the ground. The first wines were produced in 2006, but it wasn’t until 2015 that the family considered them good enough to release to the market.
