This organic and Fairtrade-certified espresso is both chocolatey and powerful, soft and sweet, with a rich smooth finish. In spring, fresh harvests from the Incahuasi cooperative in Peru arrive at our roastery, and later in winter we switch to new coffee from Comicovel in Honduras. This means we can always offer a coffee that’s in season – and tasting its best. The result is a clean, reliable brew with character. Even though Peru and Honduras may not sound that far apart, their harvest seasons differ significantly. The cooperatives are located about 3,500 kilometres apart (roughly the same distance as from our roastery outside of Stockholm, Sweden to Addis Ababa, Ethiopia) and on opposite sides of the equator. Both cooperatives are certified organic and Fairtrade, and the varieties are primarily Caturra, Pacas, Typica, and Bourbon. Incahuasi, Peru We’ve been buying coffee from Incahuasi since 2016. The cooperative is located in the Cusco region of southern Peru and was founded in 2005. The fact that the farms lie in valleys rather than on mountaintops says something about the altitude – between 1,700 and 2,300 metres above sea level. It takes many hours by car to get there, and the remoteness has helped protect the farms from the coffee diseases that are spreading around the world. Today, the cooperative has 480 members who work hard to steadily improve quality. Investments in drying beds and processing equipment have made a big difference. In recent years, the co-op has also begun producing micro-lots from individual members – creating an incentive for everyone to produce better coffee and earn a better price. Comicovel, Honduras We started buying from Comicovel in 2022. The cooperative was founded in 2016 as part of the Blue Harvest project, which aimed to improve forest management and water use. The project brought together a group of ambitious producers in the Opalaca region who decided to form a cooperative. The otherwise dry landscape has been transformed through agroforestry, helping the soil retain moisture and making coffee trees thrive. The farms are located about 30 kilometres west of Tegucigalpa in western Honduras, at altitudes between 1,400 and 1,800 metres above sea level. Today, the cooperative has over 200 members who remain focused on sustainable forestry and water management, while continuing to improve the quality of their coffee. They are certified organic and Fairtrade, produce and separate micro-lots, and have invested in raised drying beds to refine their processing even further.
