Made from locally sourced rye and barley, floor-malted at the distillery and double distilled in small direct-fired copper pot stills, the whisky combines the bold, spicy character of Stauning R.Y.E. with the rich and rounded influence of a Barbados rum cask. The whisky was distilled on February 3rd, 2020. The whisky began its maturation in virgin American oak before being transferred to a 200-litre Barbados rum cask, where it will continue to mature until reaching 8 years of age. Barbados has a long tradition of producing rich, smooth aged rum, and the cask brings another layer of sweetness and depth to the rye whisky. Expect notes of vanilla, ripe cherry, toasted malt, earthy rye spice and charred oak, combined with rich molasses, warm baking spices, sweet tropical fruit and sweet tobacco from the Barbados rum cask. Deep caramel and dark brown sugar add further richness, leading into a bold yet smoothly rounded whisky with a long, warming finish.
