Prophet's Rock White Vermouth 2024

Built on a barrel-aged Pinot Gris base, this white vermouth layers fresh citrus and ripe pear with fragrant florals and a mix of wild herbs and warming spice. Elderflower, wild thyme and kānuka bring a distinctly Central Otago character, while a subtle bitterness balances the richness. Dry and nicely textured, it's lovely over ice with a splash of soda or mixed into classic white vermouth cocktails. Winemaker Paul Pujol remembers the first time he saw snow on the ground in November at Prophet Rock’s Bendigo vineyards in Central Otago. The adage that the greatest wines come from marginal climates really plays out here. Having honed his craft with European legends (Maison Kuentz-Bas and Domaine Comte Georges de Vogüé), Paul’s sophisticated expressions of this beautiful and extreme part of the world are among New Zealand’s best.
