Lighter and more accessible than its prized winter counterpart, the Summer Truffle (Tuber Aestivum) is a true seasonal gem. Harvested from late spring through early autumn, it is distinguished by its rough, dark brown exterior and creamy beige interior, marbled with delicate white veins. Smaller and firmer than the Périgord black truffle, it nonetheless carries a charm entirely its own. The flavour is earthy and nutty, with gentle mushroom notes and a subtle, almost hazelnut-like warmth.
