Natcha Lot 2 builds on everything we’ve come to love from their coffees. Clean, expressive and driven by carefully controlled fermentation, this lot leans into sweetness and texture while maintaining clarity. Produced at Mt. Halu in Indonesia, this coffee showcases how carbonic maceration can elevate both aromatics and structure when executed with precision. About the Lot This lot undergoes 42 hours of carbonic maceration fermentation using white wine yeast, with lactobacillus introduced in the final stage to further refine the profile. This controlled environment allows for deep flavour development while preserving balance. After fermentation, the coffee is carefully dried to lock in its sweetness and texture. In the cup, expect a smooth and indulgent profile with creamy stone fruit, soft confectionery sweetness and a rounded vanilla finish. It’s expressive yet approachable, and incredibly enjoyable across a range of brew styles.
