Fermentation takes place at controlled temperatures in stainless steel tanks with a long maceration. Fining for 12 months in Tonneau with 40% and 40% in second and third passage barriques and 20% in stainless steel tanks. The wine spends 8 months more in the bottle before release. Jungano is a local name for the town of Giungano, a town near the San Salvatore vineyards. In the mouth the wine is soft with a long, persistent finish.
