This natural-process Typica Mejorado from Juan Peña at Hacienda La Papaya in Loja, Ecuador is a coffee we've been working toward for years. Hacienda La Papaya is one of the most sought-after farms in the world — a name that appears on the menus of only a small handful of the very best roasters globally — and bringing it to our program represents a genuine milestone for us. The cup is extraordinary: plum, cherry cordial, and honeysuckle in a profile that is simultaneously complex and composed, expressive but never chaotic.
