This limited first flush matcha is directly sourced from a family farm in Kagoshima, Japan. Freshly ground to order from the prized first spring harvest tea leaves that have been aged for six months. This creates a vibrant green matcha featuring deep umami notes and minimal astringency. Traditionally, first flush leaves were reserved for high grade matcha. Matcha made from these leaves is layered, umami forward, and naturally smooth. It is best enjoyed on its own, whisked simply with water, allowing the character of the tea to shine without milk or sweeteners. Certified Organic by Pro-Cert Canada Cultivar: Saemidori + Yabukita Yabukita (やぶきた) is the most widely grown cultivar, accounting for over 70% of Japan’s tea crops. It’s known for its balanced profile, fresh grassy notes, and strong umami. Saemidori (さえみどり) produces a vivid green matcha with a sweeter, umami-rich flavour and light astringency.
