LOW CAF BRAZIL Daterra TB13

Daterra have spent over a decade perfecting Laurina, one of coffee's most challenging varieties to grow - this TB13 micro lot is a fine expression of that work. Producer: Daterra Plot: TB13 Variety: Laurina Process: Natural + Cryo Fermentation Region: Cerrado Elevation: 1150m Harvest: May-July 2025 Caffeine Level: 0.52% (green coffee) Laurina is well known for its challenging agronomy and this is highlighted by the long road Daterra have taken with the variety. Across more than a decade of trials, Daterra planted, observed, re-selected, and replanted different lineages. Persistence paid off and Laurina is now an established and unique part of their offering. Laurina offers a distinctly different profile to the typical Brazilian coffee. Rather than the country’s classic chocolatey-nutty profile, Laurina coffees present floral and fruity notes, with a lighter more delicate body. This year, the yield of Laurina was small, but the quality was exceptional. Small harvests often lead to more concentrated flavour development in the fruit - and this year’s cherries were intensely juicy and complex. This micro-lot was processed using a 'cryo-fermentation' - a technique Daterra have been experimenting with since 2022. Ripe coffee cherries were hand picked before undergoing low-temperature anaerobic fermentation (~5°C) in a refrigerated steel tank. The low temperatures allow for an extended fermentation time, increasing complexity while reducing the risk of over-acidic and over-ripe flavours. After 150 hours of fermentation the coffee was dried on raised beds and finally in a mechanical drum dryer. The result is an exceptional Lo Caf coffee, with blueberry aroma, citrus notes in the cup and a sparkling acidity. As the coffee cools expect increased intrigue with herbal and minty notes.
