Paradise Grapevine 'Limousine' Sparkling White

Label: Paradise Grapevine Vintage: NV Fruit: Gamay & Chardonnay Musque Region: Niagara, Ontario ABV: 12.3% Charmat method Posh pear / disco biscuit / the eliza effect The Chardonnay which was picked early in 2023 and lightly pressed was then fermented in stainless steel and aged for 19 months before blending. The 2024 Gamay was pressed directly as whole clusters to reduce any colour and phenolic components, then fermented and aged on light lees for its lifetime. The blend was completed in May 2025. It then underwent a time-honoured charmat refermentation before being aged in bottle for one year. The result is elegant white peach, Asian pear and a touch of brioche.
