Sangiovese “vinificato in bianco” This wine is produced in limited quantity. The idea is to extract the elegance of Sangiovese, eliminating the polyphenolic compounds that give it structure. The freshness of this wine meets the expression of the red in this Sangiovese vinified in white. A fruity bouquet with mineral notes. The result is a wine with a bright straw yellow color. Sangiovese vinified as a white wine enhances its aromatic complexity with hints of unripe Marasca cherry, wildflowers, broom, and quince, with a light citrus touch when drunk very young. Rich in minerality, harmonious, and slightly savory. Particularly suitable with fish, fresh and smoked cheeses, vegetables, shellfish, and pasta dishes with white ragù.
