Coffee Of The Moment 44 (Shyira Farmers | Volcanic Soil Anaerobic Natural)
COTM 44 Batch 1 of 2: Roasted June 24 (sold out) Batch 2 of 2: Roasted July 8 (sold out) Funk: Clean Recommended rest: 3 weeks Roasted by: Craig Deahl The Return Of: Rwandan Shyira Farmers Shyira was established in 2017 by Muraho Trading with the goal of producing a distinctly different expression of Rwandan coffee while creating lasting impact for producers in Nyabihu. Though it’s the smallest washing station operated by brothers Gaudam and Carthick Anbalagan, it sits at some of the highest elevations in Rwanda, surrounded by volcanic soil, dense fog, waterfalls, and the mountains famous for their gorilla habitats. Working with nearly 1,900 smallholder farmers, Shyira’s high altitude and cool climate create ideal conditions for slow cherry maturation and vibrant acidity. For this lot, cherries were fermented beneath a tightly sealed plastic sheet, with water poured over the top to create an anaerobic seal. This allowed oxygen to escape without reentering the tank. After 48 hours, the sheet was pierced, releasing the water over the cherries to cool them and slow fermentation, resulting in a creamy, fruit forward cup layered with florals. Coffee Of The Moment features a new microlot coffee with a unique story. These are hyper limited releases that can sell out entirely in as little as a day or as long as 3 weeks. Once the batch sells out it's gone for good. Subscribe to get a new rare and unique coffee to your door every single month! This is coffee for the curious. ---
