A coffee that shows just how exciting Colombian varieties can be right now.” / Oskar Garberg Ombligon is a rare Ethiopian heirloom mutation that Luis Anibal has spent years cultivating and understanding at his farm in Acevedo. The variety takes its name from the distinct “belly button” shape found at the base of the elongated cherry — ombligo in Spanish. Through years of observation and selection, Luis has become one of the few producers able to consistently unlock the remarkable potential of this cultivar. The cup is vivid yet composed. Bright raspberry acidity meets floral hibiscus and soft caramel sweetness, supported by a clean and silky structure that carries through the entire experience. Delicate herbal nuances and refined florals add further complexity to the cup. Taste description: Bright notes of ripe raspberry and hibiscus florals layered with soft caramel sweetness. Process: The coffee undergoes a carefully controlled washed process designed to preserve clarity and precision. After selective hand-picking, the cherries are floated and hand-sorted before undergoing 30 hours of underwater fermentation. The coffee is then pulped, gently washed and slowly dried under temperature-controlled conditions until the ideal moisture content is reached. The result is a coffee with exceptional transparency — a lot that feels both vibrant and remarkably refined.
