Jijón and his son Jose Ignacio Jijón, focused on producing some of 
Ecuador’s most expressive coffees. The farm sits at a mouth watering 2200m of elevation and this lot features Typica Mejorado, which can
go head-to-head with some of the world’s best Geishas. Pepe’s approach is rooted in a respect for nature and terroir. Through careful fermentations, he consistently produces coffees that are 
complex, and truly reflective of the coffee’s terroir.

 This omniroast has been optimized for filter, but a well trained barista will definitely be able to pull tasty shots with it.
