Clos Cormerais Muscadet Sevre et Maine sur Lie
Made from 100% Melon de Bourgogne grown in the village of Monnières, at a site called La Cormerais, on shallow, stony soil over a micaschist subsoil with southwestern exposure. The vineyard is High Environmental Value certified since 2015 and organic certified since 2020, shaped by short Guyot Simple pruning and ploughed soils with no synthetic products used. The wine is pneumatically pressed, cold racked, and vinified with natural yeasts in a stoneware vertical ovoid tank, then nourished on its lees for ten months of fermentation with no racking until bottling. Best served at 12°C and decanted, it has a potential ageing window of up to 10 years. It pairs well with baked monkfish and vegetables, scallops flambéed in whisky, or a thyme-lemon chicken escalope.
