July memories – Pineapple upside down
Every summer holiday, one of my favorite traditions was making pineapple upside-down cake at my cousins’ (Kristen) house during the July/August vacation. This flavour brings those memories to life with creamy roasted pineapple ice cream, sweet cherries, and tender vanilla cake pieces in every scoop. Roasting the pineapple deepens its natural sweetness, while the cake and cherries recreate the comforting flavors of the classic dessert. I added Caramel sauce for a touch of sweetness. Turning a cherished childhood memory into an ice cream that’s made for summer.
