Potato is predominantly a starch material and its lipophilic fraction is minor; the steroidal glycoalkaloids alpha-solanine and alpha-chaconine can partition into non-aqueous systems and are toxicologically restricted, so glycoalkaloid content should be assayed rather than assumed.
