ISLAY PEAT THROUGH A BOURBON LENS Bowmore sits on the shores of Loch Indaal in the heart of Islay, and it has been making whisky since 1779. That makes it one of the oldest licensed distilleries in Scotland. Its spirit carries the island's signature peat smoke, but with a rounder, more maritime character than the heavy hitters on Islay's south coast. Uncharted's "One Way Or Another" takes that Bowmore spirit and lets a first fill ex-Jim Beam bourbon barrel shape it for 11 years. No sherry influence, no wine cask finish. Just Islay spirit and American oak. The bourbon barrel amplifies the cereal sweetness and honey while the Bowmore peat stays present underneath: salty, coastal, never overpowering. This is minimal intervention whisky. Uncharted bottled cask UC067 at natural cask strength with no colouring and no chill filtration. Cask Profile: 1st Fill Ex-Jim Beam Bourbon Barrel A first fill bourbon barrel previously used at Jim Beam in Kentucky. The first fill means this oak had maximum flavour to give: vanilla, honey, caramel, and toasted grain. Bourbon barrels are smaller than hogsheads (roughly 200 litres), giving a solid wood-to-spirit ratio over 11 years. The American oak pulls Bowmore's naturally peaty spirit toward sweetness and cereal, creating a balance between Islay smoke and bourbon-barrel warmth. Tasting Notes Nose Salty peat, sugary breakfast cereal, icing sugar and a touch of wood at the back end Palate Bright and salty.
