Most families grow about 250 coffee plants, primarily Red Bourbon, and hand-pick the cherries at their optimal ripeness. At the station, the cherries are floated, hand-sorted, and depulped within 6 hours of delivery. Afterwards, the parchment is slowly dried on raised beds for 2 to 3 weeks, with constant sorting throughout the process. Each lot is kept separate by station, day, and quality, ensuring full traceability.
