Brasserie bread is best consumed fresh within 2 days. If it is not possible to consume within 2 days you can freeze the whole loaf, or slice, freeze, and take out to toast as you go. Whole loaves can be refreshed in a 200°C oven for 6-8 minutes, bringing back to life it’s crunchy crust and chewy crumb texture.
