Farm: Ar Lume Origin: Thailand Estate: Ban Doi Chang, Mae Suai Province: Chiang Rai Variety: Chiang Mai 80 Process: Experimental Washed Altitude: 1200-1400 MASL Producer: Veera Mongkhonkulpongsai Veera inherited the farm from his father and named it to honor him as “Ar Lume”. The farm located on the mountain called Doi Chang, a place where most locals produce and grow coffee for living. In the past, Veera had very difficulty in selling his coffee and used to depend on the local market which meant low prices and little reliability. Since first met in 2017, Samadool Team started to support and work together with Veera resulting in incredible coffee quality improvement. He is the first Thai coffee producer that work with us. This coffee is a special lot from Veera. The only ripe selective cherries for this lot were carefully hand-picked prior to processing. After harvesting, coffee cherries were left fermented with water in sealed tank for 24 hours, then pulped. The wet parchment was then put in grain pro bags and left under the control temperature atmosphere at about 16°C-20°C for 72 hours. When it reached the desired pH level, it moved to dry on the bamboo bed around 4-5 days. Following this, the coffee moved to dry under the shade until reaching the desired moisture level of 10-11%. The total average drying time was approximately 25 days depending on the weather.
