Live Southern Rock Lobster Live southern rock lobster caught in the cold, clean waters of South Australia and sold live — sweet, fine-grained meat that cooks firm and springy. Sold in pairs. Because of the nature of the product, the exact size you select may not be available, in which case we may substitute the next size bracket down and charge accordingly. Live seafood disclosure: please allow up to 5% weight loss, as live seafood loses water once out of the water. On arrival: we pack the lobsters live in chilled foam boxes. Cook them the day they arrive. A lobster that has died before cooking breaks down quickly — do not hold it for later. If one arrives dead, do not eat it: take a photo and contact us, and we will make it right. Keeping it before you cook: hold it live at 0–4°C, cool, damp and covered — a tray under a wet cloth in the fridge. Never store it in fresh water or sealed in an airtight bag. Twenty to thirty minutes in the freezer before cooking sedates it, which is easier and more humane to handle. Allergen: contains crustacean.
