Frenchie ferments and matures for 6–9 months in large concrete tanks and is released onto the market annually. This wine ferments and matures for six months in large concrete tanks. Vineyard work is carried out largely by hand. Targeted green harvesting ensures that the yield never exceeds 1 kg per vine. The harvest is also performed by hand. To preserve the freshness and quality of the grapes, they are cooled to 5°C in cold storage overnight before undergoing a further careful selection process on sorting tables.
