It took a couple roasts to dial this one in – because Volcancitos always surprises me with its elevation profile, producing coffees with a lot more density than expected. But once I turned up the heat, this one popped. The cup is saturated with complexity, starting with a delicous aromatic profile and delivering on that with fruits and spices. I actually love this coffee. Of course it’s produced by our friend Sergio, who has brought us amazing washed, honey processed, and natural coffees over the past three years. He’s a young, serious businessman, but when he’s not working, Sergio is anything but serious. He brings laughter, music, and life to the party.
