Habtamu Danche - Ethiopia

The subdistrict of Danche has garnered much acclaim for the quality of its coffee, relative even to the high standards already set by the greater Gedeb district. This coffee is an aggregate lot, delivered by smallholders to Habtamu Fikadu’s Danche Washing Station. Upon delivery, cherries are sorted and mechanically depulped, fermented for 24 hours, hand-washed of any remaining mucilage and then dried on raised beds for 9-12 days. During drying, beans are shaded from direct sunlinght, rotated regularly and measured for moisture.
