Costa Rica Las Lajas Series - Honey Processing The Red Honey has more fruit matter left on the seed than the yellow honey, but less than the black honey, making this a very good example of the center point between washed and natural coffees. In this coffee we taste the best of both those worlds: a clean, clear Strawberry note reminiscent of a washed coffee, but also a denser Peach Jam that would typically feel at home with a natural coffee. These two are brought together by a unifying Cranberry note that is distinct and clear, while lending its acidity to brighten the sweetness of the Strawberry and Peach Jam notes.
