Sherry casks have always been held to a high regard among whisky drinkers – and we get why. Palo Cortado is one of the rarer sherry styles. It combines the elegance of Amontillado with the rich full-bodied structure of Oloroso. The smoked rye spirit is made from locally sourced rye and barley, floor-malted in-house, and double distilled in direct-fire alembic pot stills. The craft approach is strong in Stauning. This smoked rye spirit is fully matured in the sherry cask - expect a complex whisky with notes of campfire, sweet tobacco, roasted nuts, dried fruits, and malty rye bread. Flavour profile: A smoked rye whisky in a Palo Cortado cask offers a unique profile where the rye's bold spice and peppery grain meets the sherry's nutty elegance, resulting in a complex balance of savoury campfire or cigar smoke, roasted almonds and walnuts, dark dried fruits like fig and plum, and a refined, subtly dry, spicy finish with hints of freshly baked rye bread.
