This is followed by a distinct acidity reminiscent of grapefruit that brightens the mouth, adding vibrancy to the overall flavor profile. As it progresses toward the middle, a distinct sweetness becomes the center of the structure, feeling almost like syrup. With another sip, apricot notes gently rise above the sweetness and texture, along with a variety of citrus nuances that come to mind, enriching the flavor profile. Finally, you will feel a long, calm finish reminiscent of Ceylon tea. CAREFULLY CRAFTED YELLOW BOURBON El Obraje is likely a familiar name to long-time Bean Brothers customers. We started in June 2023, and this is already the eighth time we are introducing it. Among them, this is the third time we are introducing the Yellow Bourbon variety. Coffee cherries are usually red, but as you might have guessed, Yellow Bourbon is yellow. It is a variety discovered in Brazil that has frequently ranked among the top in the Brazilian COE. We fermented these Yellow Bourbon cherries for 18 hours while blocking sunlight and oxygen, and after removing the pulp, sealed them again to ferment for another 12 hours without moisture. We then washed them thoroughly with potable water, sun-dried them for 2 days, and machine-dried them for 3 days.
