They are fast cutting, and give great positive feedback, and slow wearing. These have been a top pick for 3 years in a row. This whetstone, paired with a good quality strop, will give any knife an edge suitable to be used in any kitchen. When using this whetstone, Ryky often finishes with the Suehiro Rika 5000, which is a soaking polishing whetstone. Made in Japan Origin: Niigata, Japan Grit No.: #1000 WA Type: Soaking Dimension: 205×73×29mm (8.1 x 2.9 x 1.1") Weight: 1000g (2.2 lbs) Material: Ceramic Includes a Nagura for adjusting Includes a rubber frame About Suehiro Rika #5000 The Suehiro Rika 5000 is one of those rare polishing stones that give the user great feedback, while retaining good sharpening speed. It can be used by just applying water during sharpening, but a 5-10 minute pre-soak greatly improves polishing quality. The cut speed of this whetstone performs similar to what many 2000-3000 whetstones feel like. Though not as slow wearing as other 5000-6000 whetstones are, due to its soaking nature, it is not considered fast wearing. Ryky has kept a broken Rika 5000 whetstone in his collection for 4 years, and refuses to replace it with a brand new one. Made in Japan Origin: Niigata, Japan Grit No.: #5000 Type: Soaking Dimension: 206 x 73 x 23mm (8.11 x 2.87 x 0.91") Weight: 670g (1.47 lbs) Material: Ceramic Grit Material: White Aluminum Oxide Base: Without Base (5000-DN) Includes a Nagura for adjusting Note: Suehiro no longer print the label directly on the surface of the stone. It now comes with a label made of cellophane film. About Naniwa Sink Bridge The Naniwa Sink Bridge is a great way to hold your whetstones directly over your kitchen sink, providing easy access to water. Having your whetstones over sink also makes things neater and cleanup easier. No more water running all over your counter top or workbench. Made in Japan Origin: Japan Model IZ-1111 Item Weight: 2.45 lb (1.1kg) Dimension: 18" x 6" x 1.6" (45.72cm x 15.24cm x 4cm) Material: Stainless Steel About Naniwa Whetstone Holder After years of buying and testing dozens of whetstone holders on the market, this is one Ryky’s favorite. It’s one of the only holders that uses truly stainless hardware, and rails. It also has one of the widest footprint of all whetstone holders, which makes it one of the most stable to use. It will hold all but the largest whestones available. Whetstones that are larger than what this holder can handle, generally will come with their own bases, or are specialty stones that require a much different holder solution.
