Domaine Didier Dagueneau Pouilly-Fumé Silex
Forget everything you think you know about everyday Sauvignon Blanc. The late, legendary Didier Dagueneau - the self-styled 'wild man of Pouilly' - turned the wine world on its head by proving that Sauvignon Blanc could stand shoulder-to-shoulder with the great wines of Burgundy. Today, his son Louis-Benjamin carries the torch with the exact same manic obsession with quality, farming their Saint-Andelain vineyards biodynamically, hand-harvesting in multiple painstaking passes, and even plowing the soils with horses. The top Dagueneau cuvée, Silex is a masterclass in texture and tension with a profile that is dense, elemental, and very structural. It opens with an unmistakable whiff of gunflint and smoke layered with crystalline grapefruit, lime zest, and wild herbs. On the palate, it is tightly-coiled and laser-focused with an intense, chalky minerality and an epic, salty length that seems to go on forever.
