With a medium body and low astringency, this single cultivar matcha is ideal for a refined latte, au lait, or ceremonial preparation. Sustainably grown in the lush hills of Shizuoka, Japan by Hattori-san, a fourth-generation farmer and pioneer in sustainable tea cultivation, Tsuyuhikari is crafted from a rare single cultivar harvested in small quantities each year from a single tea plant lineage. This makes Tsuyuhikari exceptionally uncommon, as most matcha is made from blends of multiple cultivars sourced from different farms to achieve a consistent flavor profile. Shaded by solar panels using Hattori-san’s patented technique and fertilized exclusively with organic materials, Tsuyuhikari is now USDA Certified Organic, a recognition that reflects how this matcha has always been grown. After harvest, the leaves are steamed immediately to stop oxidation and lock in color, flavor, and nutrients. They’re dried, de-stemmed, and de-veined down to pure tencha, then stone-milled to order at low temperatures, so that nothing about the leaf is altered or lost before it reaches you.
