He's known for his deep understanding of coffee genetics and his commitment to quality. For this lot, the ripe cherries are floated to remove any low-density fruit. They’re then depulped and fermented anaerobically with a CO2 injection for 48 hours. The coffee is dried in a drying chamber, then transferred to parabolic trays until it reaches a target moisture content of 10.5%. The result is a cup with notes of sweet lemon bar, orange blossom, and fig.
