NV Woodlawn 'Cuvée 241' Extra Brut

80% Pinot Noir, 20% Chardonnay sourced from a few of our growers in the area, picked for flavour for an earlier release style. Predominately from 2024 base. All whole bunch pressed of course, nice slow & cold ferment in tank before resting on lees for about 6 months. Chardonnay component was allowed to go through MLF in tank for creaminess and provide some texture around the spritely acid profile of the pinot. The wine was assembled and tiraged, then spent 14 months on lees prior to disgorging with a dosage of 4g/L. 'On the palate lively green apple and lemon zest meet toasted brioche, subtle almond skin and saline minerality, with precise acidity and persistent fine mousse. The texture is chalky and refined, carrying citrus blossom and a faint pastry note to a long clean finish that compels another sip of restrained complexity.' Producer Note Tasmania, Australia
